Let's Recap

It's been a week since we finished our 5 Day Reboot with Joe. I can say, those were 5 really challenging days for me. I learned so much about my determination and dedication. But most importantly, I'm learning to be more creative in the kitchen. Pinterest has become my go-to for creative meals. I've also continued juicing and looking forward to the day I find a green juice that I love... I even got my hubby drinking the juice now.

Here are some of the meals I've made in the past week and my new favorite find:
Dinner last Friday - Sauteed green beans and brussel sprouts, rice pilaf and bacon wrapped chicken with a mushroom cream sauce

Lunch Salads for me and G - Cucumbers, Blueberries, and Romaine

Another Lunch Salad- Romaine, Blueberries, Apples and Strawberries... added 2 boiled eggs after the pic

Today's Lunch Salad - Romaine, Blueberries, Red Peppers, Carrots and Strawberries

G loved these Gluten Free and Wheat Free Rice Chips... they were pretty awesome

My Favorite Find of this last week- KOMBUCHA .. this is the Hint of Mint flavor from Barefoot... OH EM GEEE .. I  need to go buy more.

My Homemade Apple Cinnamon Muffins with Toasted Granola.. made from Apple Pulp from my Juices this week.

Day 5 - I'm Free ... Well after today

Days 3 and 4 went much better than the first two. No more headaches and a lot less craving of solid foods. I kept mentioning that I wanted a salad, but not due to hunger just out of desire. Glad to see that I had some commitment and I stuck with it. Now on to better healthy living altogether!

Day 2 - Pretty Juice

Day 2.. man you suck. I woke up with the same headache I went to sleep with. I was just angry today... full blown angry. Totally felt the struggle. The Sporty Spice juice (red below) was absolutely mortifying. I gagged as I drank it... got half of one jar down...hopefully I can get the other 1.5 jars down tomorrow. Aren't the mason jars cute?

Using, a plastic bag to catch the pulp has made cleanup much easier. Beet juice stains everything including, my counter and my fingers. Thankfully, I had a magic eraser on hand to clean up.

Day 2

I went to bed last night with a headache but woke up this morning feeling well rested. Unfortunately, it went down hill from there. By breakfast the headache was back and in full effect. I was very hungry throughout the morning into the afternoon. My hunger caused me to attack an innocent orange! Then there is the BEET.  Yes the BEET as in Dwight Shrute and his beet farm BEET. It tastes just like it smells...dirt. The afternoon snack juice, "Sporty Spice", is made with 2 beets, 1 carrot, 3 celery, 1/2 lemon and basil--which I did not use. Through my dislike of the BEET, I managed to drink all of the juice. Turns out that was the best part of the day! Within 15 minutes I no longer felt hungry, the headache was gone, and I had more energy. YAY!!! I realize that trying to stay busy and not sitting idle helps keep my mind off of being hungry. Being positive and motivated is difficult as my body is detoxifying but I am committed to our plan. I am so elated that Day 2 is almost over. Let's hope tomorrow is better :)

My First Juice

I was pleasantly surprised!

Day 1 (Un)Excitement

My attempt to buy the same juicer as my fellow juicer was very unsuccessful. I do not even want to count how many stores I went to looking for the Hamilton Beach. Got up early Sunday morning (Day 1) determined to find a juicer. With disappointment looming I finally found one...
